1. Keto Peanut Butter and Chocolate Fat Bomb Cups

These keto peanut butter and chocolate cups feature just four ingredients (and one of them is optional)! On top of that they’re no-bake! Did I mention they’re also vegan!

Have you ever tried the SlimFast Keto line of desserts and snacks? If you have, you know they’re delicious. And they’re also expensive. How can you beat four ingredients and a great taste? These are so simple. And in my humble opinion, they also taste better!

What You Need:

2 cups natural peanut butter

2 cups coconut manna (coconut butter)

2 cups unsweetened cocoa powder

2 tbsp Stevia In The Raw (Optional)

Instructions:

The first thing you want to do is to melt your coconut butter. You can do this in the microwave. Add the coconut butter to a bowl and microwave for about 45 seconds. Add in the natural peanut butter and cocoa powder.

Now this step is optional and I guarantee you these keto fat bombs are delicious with just these 3 ingredients. But if you prefer your desserts more on the sweet side you may add 2 tbsp of Stevia In The Raw to the mixture and stir to combine.

All that’s left to do is scoop the yummy mixture into the cupcake liners to fill about 1/3 of each cupcake liner. You may use an ice cream scoop to do this, or just an old fashioned spoon. And place them in the refrigerator to chill for about 2 hours. Enjoy and rave about these easy to make, vegan, and keto fat bomb cups! You’ll literally never have to buy them again.

These keto fat bomb cups melt easily if left out. Store in the refrigerator or freezer using freezer safe ziplock bags.

-Natural Peanut Butter- Natural peanut butter contains only peanuts. There are no vegetable oils added and no sugar. These two ingredients are found in typical conventional peanut butter. Salt is also found in conventional peanut butter. Salt is sometimes added to natural peanut butter as well.

-Coconut Butter/ Coconut Manna- Coconut butter, also known as coconut manna- is literally one ingredient- coconut flakes. You can make your own coconut butter at home using a food processor, and may add Stevia and salt if you’d like. You can also buy coconut butter.

-Unsweetened Cocoa Powder- To make unsweetened cocoa powder, cocoa beans are dried and then ground to produce cocoa powder.

2. Keto Chocolate Cake

You may find it hard to believe that you can still enjoy a satisfying chocolate cake while doing keto. With these low-carb ingredients you can make a delicious chocolate cake while staying on track with your goals! You won’t even believe it’s “diet” cake.

This recipe for keto chocolate cake is also super easy and simple! It features just 5 ingredients! (And a few extra optional ingredients such as salt, Stevia sweetener, and vanilla extract).

What You Need:

1 1/2 cups almond flour 3 eggs 1/3 cup unsweetened cocoa powder 2 tsp baking powder 1/2 tsp salt 1/3 cup almond milk 1/3 cup Stevia 1 tsp natural vanilla extract

Instructions:

Begin by preheating your oven to 350 degrees. In a large bowl, combine all ingredients and mix until smooth. Butter a cake pan, or simply line with parchment paper. Bake this keto chocolate cake for 15 minutes! How easy was that?

3. Keto Cheesecake

Cheesecakes are such a delicious, classic dessert. One would never consider cheesecake a “diet” food yet here we are! This incredible keto cheesecake lets you indulge while again, staying on track with your goals!

What You Need:

For the keto crust: 1 cup almond flour 1/4 cup butter 1 tsp pure vanilla extract For the cheesecake filling: 16 oz cream cheese 1/2 cup powdered monk fruit sweetener 1 large egg 1 tsp pure vanilla extract

Instructions:

To begin, preheat your oven to 350 degrees. Now we’ll get started on the keto crust for our cheesecake. Melt the butter in the microwave. Combine butter, almond flour, and vanilla extract to form the crumbly crust and form the crust in a pan lined with parchment paper. Bake the crust for about 10 minutes. Use a mixer to beat the cream cheese with the powdered sweetener. It’s important that your cream cheese is at room temperature, otherwise you’ll get lots of unwanted chunkiness. Next beat in the egg, and finally the vanilla extract. Pour cheesecake filling into crust and bake keto cheesecake in the oven for about 50 minutes. Cool the cheesecake first to room temperature, and then refrigerate it for at least 2 hours (preferably overnight).
