What do I love about this barbecue chicken recipe? Well first of all it is super simple and does not require a whole lot of attention. Second of all, it is extremely flavorful chicken. And third, it is super versatile! You can put this shredded barbecue chicken on sandwiches, you can put it into tacos and burritos, You can even make yourself a diet shredded barbecue chicken rice bowl! My personal favorite!

What we’re going to do first is remove the chicken thighs from their container. We’re going to boil water in a large pot and fill it with delicious seasonings and herbs. Aside from the easy factor, guess what else is incredible about cooking chicken this way? You get a lovely homemade chicken broth out of it!! 

If you’ve ever made homemade chicken broth then you know that it is substantially more delicious than the store-bought chicken broth. Which in turn gives you a much more delicious homemade chicken noodle soup. There’s no reason you need to stop at chicken noodle soup either. Using the chicken broth, you can make all sorts of different types of soups. The broth just adds a hearty and amazing flavor to any soup.

Once our large pot filled with seasoned water comes to a boil, we just put in the chicken thighs and return it to a boil. We’re going to cook the chicken thighs in the boiling water for approximately 30 to 45 minutes. Then we’ll remove the chicken thighs and set them aside into a bowl to cool.

Once our chicken thighs are completely cool, we will use two forks to shred them into tiny shredded pieces. If you have a KitchenAid mixer with a shredder attachment, you can certainly use that to shred the chicken thighs. However if you don’t own that type of mixer, two forks will do the trick quite well! And everybody owns two forks.

The last step to achieving delicious barbecue shredded chicken in the simplest form possible, is to add your favorite barbecue sauce to the shredded chicken and throw it on a hot oil pan to sauté. Heating the chicken back up with the sauce is going to infuse it with a ton of flavor. Once your shredded chicken is coded in that barbecue sauce and heat it up to perfection it’s ready to serve and devour!

What You Need:

1 lb boneless skinless chicken thighs

1 tbsp salt

1 tsp black pepper

1 tbsp dill weed

2 bay leaves

1 tbsp applewood flavored rub

1/2 cup Bullseye BBQ sauce (or your favorite BBQ sauce)

1 tbsp Olive oil for sautéing

Directions:

Add chicken thighs to a large pot of boiling water. Add the salt, pepper, bay leaves, applewood flavored seasoning, and dill weed. Dill weed may be dried or fresh. Allow the chicken thighs to boil for approximately 30-45 minutes until chicken is cooked through.

Remove the chicken thighs to a separate bowl, and save the chicken stock to use for your favorite homemade chicken noodle soup (or any other favorite soup). Allow the chicken to cool before shredding with two forks, or a mixer attachment.

Heat up 1 tbsp olive oil in a pan and sauté shredded chicken with BBQ sauce for about 5 minutes until flavors have melted and chicken it hot. Serve shredded BBQ chicken on a bun with melted cheese, in tacos topped with fresh vegetables, or in a rice and bean bowl! Wasn’t that easy?! I love when something so delicious is super simple to make!

Can I use a sauce other than BBQ for this shredded chicken? Oh, absolutely! That’s what makes this shredded chicken recipe so easy to tweak, you can use literally any sauce you love. Allow me to make a few recommendations? Southwestern style ranch or taco sauce tastes amazing sautéed into shredded chicken, and pairs well for tacos, burritos, or taco bowls.

Halfway through this recipe, I ran out of my favorite Bullseye BBQ sauce! Oh no! I couldn’t get myself to the grocery store at the moment, so what did I do? I made my own homemade BBQ sauce in 10 minutes! You can make this easy homemade bbq sauce at home in 10 minutes tonight! Try it, and you’ll never want to eat store bought barbecue sauce ever again!

You can also use your favorite pasta sauces with this chicken, like Alfredo or tomato sauce. Once the chicken is smothered in the sauce, you can pour it all over your favorite pasta. The possibilities are truly endless with this shredded chicken recipe. I hope you enjoy!
